Please do not hesitate to point out any mistake in the sentences, I will appreciate it very much.

The fall 2014 semester has just finished.
Not exactly, for I have a math final exam in Dec. 16 which is quite easy for any Chinese student.
Before the new semester, I did not apply for the credit equivalence, so I have to choose all the courses listed in my program schedule.
There are eight courses for the first semester. In fact, it does not mean that anyone must choose all the courses suggested by the academic counsellor (or services center). If you do not mind how long you wiil stay in College, you can choose at least four courses each semester. Thus, you can get Loan & Bursary from the government.
I chose seven courses except Physical Education. I thought that maybe I could not do with eight courses in one semester. In Canada, P.E is the same important like other courses. It is said that thers are theoretical test, homework and exercise in the gymnasium or anywhere outshide the campus for P.E.

Although I can understand lots of words in spoken english, I usually write down the wrong words or letters.

The first two weeks in the college, I felt everything strange or different to those of in China.
1.There are about fifty new students in our program. We were divided into two groups, one of 21 students and the other of 30. Each group has the same course in the different time by the same teacher. So, every teacher lectures the same content of his/her course twice each semester. In the laboratory, everyone should wear safety boots certified by CSA(Canadian Standards Association), otherwise he/she will be refused to enter the laboratory.
2. In the classroom, lots of young guys ususally eat breakfast, snack or brunch, drink coffee, juice, etc. In addition, they say loudly some bad words or slangs before teacher's face. For example, Shit, Piss, Fuck and Tabarnak(French). Of course, I usually do not understand all the words that they talk about because of my poor english.
3. For two courses, wen have one hour of lecture in the morning, two hours of lab in the afternoon. Each group is composed of two or three students. Thus everyone can practice well in the lab time and then finishes the lab report respectively after class.
Lots of strict requirements for lab report are made. I think that this kind of report likes a small academic paper. For me, it's quite easy because I have written nearly twenty academic papers in Chinese periodicals.
It's great to see you can write in English so well.I'd like to make some comment and hope it'll be of some help.

The red words should be"graduation requirements profile". Does it make sense, Dawn?

Yep, those guys use these words from time to time.
I heard that one guy said "It's fucking hot" in summer.
At the beginning of December, when we made surveying around the campus, it was very cold.

That sounds a lot better, but probably it'd be even much better if you could say "... so I have/had to choose all the courses" required by the program.

Great question!
This is an issue of grammar. The plurality or singlarity of 'be' in the "there be" structure is determined not by how many items you have following the 'be' but by the plurality or sigularity of the single item immediately following the 'be.' That is to say, if "there be" is followed by a singular noun and ten other nouns, the singlar 'be', namely, is/was, should be used.
For example, In my garden, there is a lovely rabit, a cute little girl, and a barking dog.
In contrast, in my garden, there are two lovely rabits, a cute little girl, and a barking dog.

So you can say something like "It's a bit challenging for me to put down my ideas in English."

One of my teacher about fifty years old said to me, "Life 007, you are doing very well in my class. I mean it is very challenging. Are you OK in other classes?"
I replied"OK.But, it's tough. You know my biggest problem is language."

I felt satisfied from time to time when what I had done was accepted by teachers.
For example, I did very well in Drawing class so that the professor often left such a message for me"Can we photocopy your work for educational purpose?" Have picture, have truth. :-D

I just tried to prevent using the" there be" structure.

4. In the first class, each teacher talked about some policies, the content schedule and process, the textbook or other readings and subsidiary stuff necessary. He/She also gave us the office hours, office telephone and e-mail address. No teacher gave us the cell phone number as is quite different from that of in China.
The content of each subject was not so much.
